Vinification method

The Sauvignon Bianco grapes are mechanically harvested in the period of August.

They are then de-stemmed and pressed to then put the must in vinification at a controlled temperature of 18 ° C together with the marc, so that the must absorbs the flavors and colors typical of the grape.

After two days, the racking is carried out to keep only the free-run must and then place it in refinement in steel barrels until spring and then bottling it.

Characteristics Land and Vineyard

The Sauvignon Bianco vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
