Vinification method

The Sangiovese grapes are harvested mechanically in mid-September, but strictly early in the morning.

They are de-stemmed and pressed and then put the must in vinification at a controlled temperature of 20 ° together with the marc and selected yeasts for only 15 hours. The must thus absorbs the right shade of rose and is then drawn off and vinified as a white wine

It is then aged in steel barrels and then bottled in the summer to avoid refermentations in the bottle.

Characteristics Land and Vineyard

The Sangiovese vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
