Vinification method

Malvasia grapes are harvested mechanically towards the end of August.

The grapes are de-stemmed and pressed to obtain the must which is then placed to vinify with a controlled temperature of 18 °

The vinification is carried out with the pomace, as per peasant tradition, in addition to the use of weak selected yeasts.

Subsequently after two days we carry out the racking through a light pressing and filtration to keep the wine sweet.

It is then placed in steel barrels for aging until spring where it is placed in the bottles for the subsequent refermentation.

Characteristics Land and Vineyard

The Malvasia vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
