Vinification method

Trebbiano grapes are mechanically harvested in the early morning towards the end of August.

Subsequently it is de-stemmed and pressed and placed in vinification at a controlled temperature of 17 ° together with the marc and selected yeasts.

In this way the must absorbs flavors and colors that make the wine fragrant and rich in fruity notes.

After 2 days we proceed with the racking by pressing to finish aging inside the steel barrels.

Then proceed with bottling in early spring, to thus obtain a spontaneous refermentation in the bottle.

Characteristics Land and Vineyard

The Trebbiano vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
