Vinification method

The centesimino grapes are harvested mechanically within the first ten days of September, strictly in the early morning.

They are then de-stemmed and pressed and the must is vinified at a controlled temperature of 20 ° together with the marc and selected weak yeasts, in order to obtain a sweet wine.

For 15 days, 2 daily pumping over is carried out and then the racking is carried out by soft pressing.

It is then placed in steel barrels until the summer for bottling

Characteristics Land and Vineyard

The Centesimino vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
