Vinification method

Cabernet Sauvignon grapes are harvested mechanically towards the end of September or beginning of October, but strictly early in the morning.

They are then de-stemmed and pressed to then begin the vinification at a controlled temperature of 20 °

The vinification takes place with the marc and with selected yeasts by carrying out 2 daily pumping over for 20 days.

It is then drawn off through a soft pressing and then moved on to refinement in steel barrels, until it is bottled in the summer.

The Cabernet Sauvignon vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.

Cabernet Sauvignon is a wine that fits perfectly with fish dishes.

For example, enjoyed in combination with a larded roast pork loin with potatoes, it is ideal.
