Vinification method

The bunches is mechanically harvested in the early morning of the first ten days of September.

Subsequently it is destemmed and pressed and placed in vinification at a controlled temperature of 18 ° together with the marc.
In this way the must absorbs flavors and amber colors typical of this grape.

After 3 days we proceed with the racking by pressing to finish aging inside the steel barrels.
Then proceed with bottling in the spring, as per tradition.

Characteristics Land and Vineyard

The vineyard is located in Faenza, in the province of Ravenna not far from the Via Emilia.

Located on the first hills of Faenza in the Campo Cross Coralli Mountains area, at a height of 80 meters above sea level, it is planted on a clayey and silty soil typical of the area.
